To salvage in V Rising, you need The Devourer. This "living" workstation tears various items, including equipment, blueprints, and certain tools, and transforms them into raw materials. Start by hunting and defeating the Level 30 V Blood Carrier, Lidia the Chaos Archer, as she holds the blueprint to crafting The Devourer. Find this boss patrolling the roads between the Bandit Copper Mine and Bandit Logging Camp in Farbane Woods. Once defeated, return to your base and use 12x Plank and 8x Copper Ingot to craft The Devourer. Then, simply interact with the workstation and place the items in it. Remember, your decision to salvage any particular item in V Rising should be final, as you cannot recover it after the process is complete.
